Porridge is one of my favourite meals. At night I am actually excited because I know that when I get up in the morning my husband will have made me porridge. The other day he tried something different, savoury porridge! It doesn't sounds right but it was amazing. Honestly, I promise if you try you will love it as well.....

Ingredients (2 Servings)

  • 100g Rolled Porridge Oats
  • 400ml Milk
  • 2 Eggs
  • 100g mushrooms
  • 50g baby spinach
  • 1 large Red Pepper
  • 1/2 Onion
  • 1 Small Handful Chives
  • 1 tsp Olive Oil
  • Salt 
  • Pepper

Method

  • Cut the pepper, chives and onion into pieces. Heat the olive oil and cook the pepper, onion and chives until they are soft
  • In a saucepan add the porridge and milk and cook for about 5 minutes. Add the cooked chives, onion and pepper and mix in. Add salt and pepper to taste
  • Prepare the eggs any way you want (I love to have soft boiled, poached eggs)
  • Serve the porridge in a bowl with the egg on top
