Spinach muffins, which are great for St. Patricks Day, or for coming Easter.
This recipe makes enough for 8 muffins
150g Spelt Flour
3 tsp Baking Powder
1 tsp Stevia
1/2 tsp salt
2 tsp Vanilla Essence
30g Coconut Oil
140 ml Milk
How to do it:
Preheat oven to 200 degrees C
Mix together all the dry ingredients in a mixing bowl.
Place the spinach, milk and coconut oil in a blender and blend until smooth.
Mash up the banana and add to blender with the vanilla. Blend until mixed in
Add wet ingredients to the dry ingredients and mix together.
Place into non stick muffin/cupcake dish. Fill each holder about 3/4 full.
