Baked Eggs

Eggs are a great food to have for breakfast and I am always looking for new ways to cook them. Here is a great recipe for baked eggs and beans that is full of protein and fibre and will keep you full and full of energy until lunchtime!


Ingredients (4 Servings)

4 Eggs

1 can Chopped Tomatoes

240g Cooked Beans (or 1 can of cooked beans)

3 cloves Garlic (crushed)

1 tsp Paprika

160g Light Mozzarella

Salt

Black Pepper

1 tsp Olive Oil


Method

  • Preheat oven to 200 degrees celsius and prepare a baking dish
  • Heat the oil in a pan and add the garlic. Cook for a minute then add the chopped tomatoes, paprika, salt and pepper.
  • Drain the beans and rinse well (if using canned beans)
  • Reduce the heat and allow the tomato sauce to simmer for 5 minutes, then add the beans, mix them together and allow to simmer for another 3 minutes
  • Place the tomato and bean mixture into the oven dish and 4 'holes' in the mixture. Break the eggs and place each one into one of the holes
  • Grate the mozzarella and sprinkle on top
  • Place the dish into the oven and bake for 15-20 minutes (until the egg whites have set)
  • Remove from the oven and serve (leftovers can be stored and reheated for later)
