Chocolate roulade

No flour, amazing and healthy

Ingredients:

  • 175g dark chocolate (with more than 70% cocoa content)
  • 6 eggs
  • 60-100g honey (to your taste, if you like it sweet ad 100g)
  • 2 tbsp cocoa powder
  • 300g greek yogurt
  • fruit of your choice

Method:

  • Chop chocolate finely.
  • Separate yolks and egg whites.
  • Prehaet the oven to 180'C.
  • Prepare yourself a baking dish with baking paper.
  • Melt the chocolate in a bowl set over a pan of barely simmering water.
  • Place the egg whites in a large bowl and whisk until stiff but not dry. If you turn the bowl upside down, the whites should be stiff enough not to fall out.
  • Put the egg yolks in a separate bowl with the sugar and whisk using the same whisk (no need to wash it) on high speed for 2-3 minutes or until thick and creamy. Pour in the cooled chocolate and gently fold together until well combined.
  • Add whisk egg whites and gently mix together. 
  • Add cocoa powder and mix gently together.
  • Pour the mix into the baking dish and make form it.
  • Bake for about 20 minutes or until done, make sure you don't bake it for too long as it gets too dry.
  • Spread greek yogurt on top and on top of that put fruit of your choice (I used before cherries, blueberries, strawberries or other berries).
  • Roll it up, done :-)
