Turkey Stuffed Peppers

Ingredients:

  • 2 peppers
  • olive oil
  • 500g turkey mince meat
  • 1 red onion (chopped)
  • mushrooms
  • 1 clove of garlic
  • 400g - 1 can of tinned tomatoes
  • 1 tbs tomato pure
  • ground cumin
  • soy sauce
  • mozzarella
  • wholegrain couscous

Method:

  • preheat the oven to 180'C and cut the peppers (as on the picture) and take out the seeds.
  • put peppers on the baking dish, drizzle with olive oil and put it in the oven for 15 minutes or until soft.
  • meantime chop up the mushrooms and crush the garlic. Add a tsp of olive oil into a non sticky pan and cook the turkey until golden and then add garlic, mushrooms and onion and cook for another few minutes.
  • when onion and mushrooms are cooked add tomatoes and ground cumin. Then add a table spoon of soy sauce and mix well.
  • using table spoon put the turkey mince into peppers and sprinkle grated mozzarella on top. 
  • Put top of peppers on top and serve with wholegrain couscous.
